Recipe: Cannabis-Infused Coconut Curry

Creamy and filling with a light coconut touch, this cannabis-infused coconut curry is the perfect dish for cold winter nights. With a dash of cayenne to open up soft coconut milk, you won’t be able to help yourself from taking seconds—or thirds. Cannabis-Infused Coconut Curry

Cannabis product: Evergreen Organix Coconut Oil*

Start to finish: 60 mins

Yield: 6 servings

Approximate dosage: 13mg THC per serving

Ingredients

  • 3 ½ cups fresh tomato, crushed
  • 1 garlic head, chopped
  • 2 tablespoons ginger, chopped
  • 1 cup cilantro, chopped
  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander seeds
  • 1 cup dried brown lentils
  • 1 ⅔ tablespoons standard coconut oil
  • 1 teaspoon Evergreen Organix Coconut Oil
  • 15-ounce can coconut milk
  • 1 tablespoon turmeric
  • 2 teaspoons sea salt
  • 1 teaspoon cayenne powder
  • 10-12 cherry tomatoes for garnish

Directions

  1. Chop the garlic, ginger, and cilantro, and crush the fresh tomatoes using the back of a large spoon or a masher. Set aside.
  2. Heat the infused and standard coconut oil in a large pot over medium-high heat. Add the coriander and cumin seeds and toast them until browned. Then add the chopped garlic to the pot and allow to cook until browned.
  3. Add the crushed tomatoes, ginger, turmeric, and sea salt to the pot and allow to cook for about 5 minutes, stirring occasionally. Then add the lentils, the cayenne powder, and 3 cups of water.
  4. Bring to a boil, cover the pot, reduce heat to low, and let simmer for 40 minutes, stirring occasionally.
  5. Once the lentils are cooked and soft, add the coconut milk. Bring the mixture back to a simmer, and add the cilantro and a handful of cherry tomatoes (about 10). Stir,then remove from heat.
  6. Enjoy!

*Note: The amount of cannabis product specified in this recipe is a very loose suggestion; the actual amount you use should be modified based on the strength of your products and the potency you desire. Dosing homemade edibles can be tricky (click here to learn why), so the best way to test for potency is to start with one portion of a serving, wait one to two hours, then make an informed decision on whether to consume more. Always dose carefully and listen to your body, and never drive under the influence of cannabis.
